Caramelized Banana Oatmeal
This is a perfect morning meal that will energize your day! Enjoy this easy 15 minute recipe to get your entire family started!
Ingredients (serves 4):
2 bananas
2 cups of Red Mill rolled oats
4 cups of water
1 tsp cinnamon
1 tsp vanilla extract
2 pinches of salt
4 tbsp walnuts
Step 1: Boil 4 cups of water and a pinch of salt on high in a sauce pan
Step 2: While water is boiling. Take one banana and smash it. Take the other banana and slice it into 1/2 inch slices.
Step 3: Pour 2 cups of rolled oats into the boiling water. Add cinnamon and vanilla. Turn heat down to medium low and stir occasionally for 11 minutes. Set a timer so you don't forget.
Step 4: Once your oatmeal becomes a solid consistency, 5-6 minutes in, add your smashed banana into the oatmeal.
Step 5 (optional): Caramelize your sliced bananas in a frying pan. Take 1 tbsp of coconut oil and place the sliced bananas on the melted coconut oil. Keep turning the bananas until they turn brown on each Side.
Step 6: After your timer goes off grab your bowls and scoop the oatmeal evenly into each bowl. Split the caramelized bananas between 4 bowls and sprinkle cinnamon and the walnuts on top! Enjoy!
Other Fun Options: Slice strawberries, blueberries, coconut flakes, flaxseed and more get creative and have fun!

Sheet Pan Veggie Fajitas
INGREDIENTS (SERVES 6):
Produce
1 bunch Asparagus
3 Bell peppers, green
16 oz Mushrooms
1 Red onion
Condiments
1 Guacamole
Spices
McCormick Fajita Seasoning
Oils & Vinegars
2 tbsp Olive oil
Bread & Baked Goods
1 Pack of Corn Tortillas
Step 1: Preheat your oven for 450 degrees. Line 2 sheet pans with foil. Set to the side.
Step 2: Prep your veggies, slice your bell peppers, mushrooms, red onion in thin slices. Cut asparagus into 3 inch pieces.
Step 3: Toss the veggies and olive oil in a large bowl. Once everything is coated begin to sprinkle the fajita seasoning onto the vegetables.
Step 4: Divide the vegetables among the two lined sheet pans. Smooth out the vegetables so they are in a single layer as much as possible.
Step 5: Place the pans in the oven to roast. Give the vegetables a stir after 15 minutes, then bake 5-10 minutes longer until tender and lightly browned.
Step 6: Serve the roasted vegetables immediately with warmed tortillas and your favorite toppings.
Leftovers can be refrigerated for several days and reheated.

Easy quick snack that will sweeten up your afternoon!
Step 1: Put one full corn with husk on in the microwave for 4 minutes.
Step 2: Let sit in microwave for 3 minutes
Step 3: Remove corn and husk from microwave, cut off the bottom and cleanly slip off the husk and silk.
Step 4: Feel free to add olive oil butter and enjoy!
